Why Does Physical Dependence Occur?
As one uses more and more of a drug, or any kind of substance, the body develops a drug tolerance. This does not just refer to illegal substances, it can also happen when one drinks coffee on a daily basis. After a while, just one cup may not be enough to get that kick which is neccesary to get going in the morning, or to stay up all night. Thus, a second or third cup may be needed. In the case of drug users, one pill or one puff on x substance may not be enough. The body adapts to the substance that has been introduced. When the drug is no longer available withdrawal symptoms that are the opposite of the direct effects of the drug appear- and this is when the withdrawal occurs. Depending on the elimination half life of the drug, symptoms can arise a few hours after the drug is stopped or may even begin several days after discontinuation of the substance.

Effects of Ecstasy ,The majority of individuals who take ecstasy tell of a pleasant, relaxant effect of the drug. The drug is known to heighten the senses of kindness, affection and a loving feeling, and it is this property which make its abuse potential high. The drug is also known to decrease appetite and sleep- a combination which is highly sought after by the college students. However, the ability of this drug to decrease sleep and increase physical activity endurance combined with its ability to decrease to fluid intake has often resulted in dehydration, exhaustion and even death. Various studies have revealed that even recreational users of the drug might be at risk of developing permanent damage that can manifest depression, anxiety, memory loss, and psychotic disorders.

Oxycontin Abuse and Withdrawal Since the introduction of OxyContin in 1995, there has been a dramatic increase in abuse of this narcotic. Unlike hydrocodone and its derivatives, whose potential for abuse is limited by the presence of aspirin paracetamol, OxyContin contains only oxycodone. The drug is easily abused by simply crushing the tablets and either ingestion, injection, inhalation or placed rectally. The drug can have serious side effects when injected as it has a prolonged extended action. Oxycontin is frequently made more available by "doctor shopping," where individuals, who do not have a legitimate illness, repeatedly visit many doctors to acquire large amounts of controlled substances. Other methods of obtaining oxycontin include pharmacy diversion, robbery, fake/stolen prescription, the internet and improper prescribing practices by physicians. Recent reports indicate that non medical use of Oxycontin is relatively high among teenagers. The increased misuse of the drug has led to a numerous emergency admissions and even deaths. Many States have introduced legislation to decrease the illegal use of Oxycontin. Numerous States have also introduced prescription monitoring and banned the sale of the drug over the internet. Despite all the increased efforts by the FDA, DEA, and state/local authorities, the illicit use of Oxycontin is at an all time high. Over the last decade the increased illicit use of oxycontin has led to the manufacture of fake oxycontin pills all over north America.

Irish Soda Bread Recipe

It is best eaten freshly baked and warm or toasted.

Irish Bread with Raisins

ingredients
4 cups flour
2 Tbsp sugar
1 teaspoon salt
1 teaspoon baking soda
4 Tbsp butter
1 cup raisins
1 egg, lightly beaten
2 cups buttermilk
1 Preheat oven to 425°.
Sift together the flour, sugar, salt, and baking soda into a large mixing bowl.
2 Using a pastry cutter or two knives, work butter into flour mixture until it resembles coarse meal, then stir in raisins.
3 Make a well in the center of the flour mixture. Add beaten egg and buttermilk to well and mix in with a wooden spoon until dough is too stiff to stir.
Dust hands with a little flour, then gently knead dough in the bowl just long enough to form a rough ball. If the dough is too sticky to work with, sprinkle in a little more flour.
Do not over knead!
Transfer dough to a lightly floured surface and shape into a round loaf.
4 Transfer dough to a large, lightly greased cast-iron skillet or a baking sheet. Using a serrated knife, score top of dough about 1/2'' deep in an "X" shape. Transfer to oven and bake until bread is golden and bottom sounds hollow when tapped with a knife, about 35-45 minutes. Check for doneness also by inserting a long, thin skewer into the center. If it comes out clean, it's done.
Hint 1: If the top is getting too dark while baking, tent the bread with some aluminum foil.
Hint 2: If you use a cast iron skillet to cook the bread in the oven, be very careful when you take the pan out. It's easy to forget that the handle is extremely hot. Cool the handle with an ice cube, or put a pot holder over it.
Transfer bread to a rack to let cool briefly. Serve bread warm, at room temperature, or sliced and toasted.

Stuffed Green Bell Peppers with Rice

STUFF GREEN BELL PEPPER
8 large firm bell peppers (green or red)
3 cups cooked rice
1 egg, well beaten
1/4 lb ground lean pork or beef
3 cloves garlic, pressed
1 large onion, finely chopped or grated
1/2 cup cracker or bread crumbs
2 teaspoons salt
1/2 teaspoon black pepper
dash of cayenne pepper
dash of Tabasco (optional)
1 pint tomato puree
4 slices bacon
Mix rice, egg, ground meat, crumbs, garlic which has been put through a garlic press or pureed, salt, pepper and cayenne.
Wash the peppers. Using a paring knife, cut out the top stem in a circle so that the pepper can be filled from the top. Scrape out the core and seeds and discard.
Fill the peppers with the meat mixture and place in a buttered casserole dish with a tiny dash of Tabasco sauce on top, if desired.
Using a kitchen scissors, cut each slice of bacon into 2 long strips, then cut each strip into half (you will have 16 bacon pieces). Drape 2 cut bacon strips over each pepper.
Pour the tomato puree around the bottom of the peppers.
Bake, covered loosely with aluminum foil for 15 minutes at 400°F. Remove the foil and reduce heat to 325°F; continue to bake until peppers are tender and browned (about 1 hour).
Serve peppers with a few spoons of tomato puree over the top and a few spoonfuls around the base.
Makes 8 peppers. Serve some right away and save the rest for the next day (even better reheated!)

Sicilian Cannoli Filled with Ricotta Cheese you will need a food processor and a pasta machine,and a metal tubes or cane or 1.5 inch by 12 inch round empty tin can.
.In food processor fitted with a metal blade, or by hand in a bowl, mix together the flour, sugar, chocolate powder, salt, butter, and enough Marsala wine to obtain a firm and sticky dough. Makes about 26for the cannoli.
ingredients
2 cups (280 gr) flour
1 oz (30 gr) sugar
1 teaspoon chocolate powder
1/2 teaspoon salt
1 oz (30 gr) butter,
melted 1 cup
(230 cc) dry Marsala wine
1 oz (30 gr) butter,
for brushing
1 egg white
frying oil
for the filling 1 - 1/2 lbs (700 gr) ricotta cheese, drained 1 teaspoon vanilla powder
1/2 lb (225 gr) powdered sugar
4 oz (115 gr) candied fruit, finely diced
2 oz (60 gr) bittersweet chocolate, diced
2 oz (60 gr) powdered sugar, for dusting
To make cannoli you need the metal tubes sold for this purpose. Pieces of cane can also be used, approximately 3/4 inch in diameter and 6 inches long 2 cm in diameter, 15 cm long.Preparing the cannoli shells using a pastry bag or a small spoon, fill the cannoli with the cheese mixture, and garnish the ends with pieces of candied fruit.
Transfer to a lightly floured work surface . . . .
. . . . and knead the dough lightly, adding some flour, a little at the time, until obtaining a smooth dough. Shape the dough as a ball, place on a dish, cover with plastic wrap, and set aside for about 1 hour. Transfer the dough to a lightly floured work surface and knead again for few minutes. Place the dough back on the plate, cover with plastic wrap, and set aside for 1 more hour.Transfer the dough to a lightly floured work surface again, and cut into 3 pieces.
Pass each piece through the pasta machine, starting with the widest number. Repeat the step until number 5 on the dial is reached and thin smooth pasta sheets are obtained. Keep the pasta dough and sheets covered with plastic wrap at all times while working to prevent the dough from drying out too much.
Cut the dough into squares 4 x 4 inch (10 x 10 cm).
Lightly butter the metal tubes.
Wrap the squares around the tubes or cane diagonally. Don't press the dough against the tubes too much; otherwise it will be difficult to remove them afterward.
Wet the overlapping part with the egg white and press on the edges to stick them together
In a saucepan, bring the oil to frying temperature.
Fry the cannoli until golden brown a few at a time.Remove from the pan and transfer on paper towels on a large plate to drain the excess oil briefly.Remove the cannoli shells from the tubes while they are still warm.Repeat the step of forming the cannoli and frying until all the dough is used.
Filling the cannoli, in a bowl, combine the ricotta cheese, vanilla, and powdered sugar. Reserve 2 pieces of candied fruit per each cannoli for decoration. Combine the candied fruit and chocolate dice with the cheese filling. Sprinkle with powdered sugar before serving.
*** NOTE***It is best to fill the cannoli shortly before serving. If the cannoli are filled too long in advance, the ricotta filling could wet the shells and the cannoli could become soft and soggy. One way to avoid this problem is to brush the inside of the cannoli with chocolate. Once the chocolate is solidified it will insulate the shells from the filling.

They represent the Sicilian dessert par excellence. Typically part of the festivities for carnival mardi gras , in the past cannoli were sent by the dozen as a present to friends. They are now available all year round in pastry shop all around Italy and wherever Sicilians have settled. Cannoli are among the most magnificent Sicilian pastries. The fried wafers are traditionally filled with ricotta cheese sweetened with powdered sugar and added of candied fruit, pistachios, and mint chips.

Stuffed Artichokes with breaded bread crumbs. Italian yes I guess so we use to serve this food for most holiday meals however I did remember that the stuffed artichokes did taste better the day they were cooked they tend to become soggy if refrigerated.
Stuff artichokes are definitely very tasty and can be a fabulous appetizer that could compliment most any meal. One note do include an extra dish to your place setting for guests so that they may use it for discarding artichoke leaves after eating. Also it would be a good idea to include extra napkins or a warm cloth too for each of your guests hands because this side dish could become some what a little messy.
Ingredient.
4 artichokes
75g anchovy fillets
crushed garlic
150g fresh breadcrumbs
50g olives oil
vinegar
parsley
salt and pepper
Directions.
1. Chop the anchovy stem , garlic, olives and parsley and mix with the breadcrumbs.
Add the oil and vinegar and work into a dry paste Season.
2. Wash the whole artichokes and fill between the leaves with this mixture.
3. Place the artichokes upright in a small saucepan.
Half cover them with water and add some oil.
Cover with a lid bring to boil and simmer for 1 hour. Serve hot.

The lower part is a 4x8 sheet of plywood, with two tubes. The tubes are screwed in place with small blocks of 2x4. The upper part is two tubes, 2x4s. A small plywood piece on edge forms the ridge. The shingles are just cardboard, painted and stapled in place. The tubes are cut out to allow the cross piece to pass through. The upper and lower parts are screwed together with longer 2x4 blocks inside tube. Built and paint the gate at home. Then with it split into two parts, transported it to the reception site. The gate is made of plywood, concrete form tubes, 2x4s, cardboard, drywall screws.
Concrete form tubes are large, round, hollow cylinders that are then filled with concrete to form solid pillars. The ones we used were made out of a very heavy cardboard or other paper based product. There were four of these tubes - two were attached to the plywood sheet to make the base of the gate. The other two were used with the crossbar and roof of the gate. We didn't pour concrete in them, just used the tubes themselves, since they are very sturdy.
The gate is actually two parts, upper and lower. The lower part is a 4x8 sheet of plywood, with two tubes. The tubes are screwed in place with small blocks of 2x4.
A 2x4 is a piece of wood or lumber that measures approximately 2 inches by 4 inches and can be a variety of lengths scrap pieces of 2x4 , as well as some 8 foot lengths
A 4x8 sheet of plywood is a four feet by eight feet, 1/2 inch thick, flat piece of wood product that is normally used in house construction.
Used little blocks of wood, just scrap pieces of 2x4, set in two circles on the plywood to match the inside measurements of the tubes. Then set the tubes over these blocks, after they had been attached to the plywood. Make sure all the pieces are firmly attached to each other to create the base of the gate. The tube walls are not thick enough by themselves,so attach them directly to the sheet of plywood. Use screws instead of nails because the gate would have to be moved several times. Nails tend to pull out much more easily than screws.
The upper part is two tubes, 2x4s. A small plywood piece on edge forms the ridge. The shingles are just cardboard, painted and stapled in place. The tubes are cut out to allow the cross piece to pass through.
For the upper part of the gate, cut vertical slits in those tubes that would allow a 2x4, about 8 feet long, to pass through both of them. The slits are located about one foot or so, down from the top of the tubes. The little vertical piece on the gate is a scrap of 2x4 attached to the middle of this cross piece. The roof of the gate is made of 3 of the 8 foot long 2x4s and some scrap blocks of 2x4.Placed several scrap blocks between two of the 2x4s, spacing them along the length. At least one block should line up with the little vertical piece in the middle of the cross piece. These scrap blocks would have measured almost the same length as the width of the tubes, so when the whole thing is set on top of the tubes, it would cover them and allow other scrap blocks to be used to attach the roof to the tubes in the same way that they were used to attach the other tubes to the sheet of plywood to form the base. The third 2x4 would have been set on top, in the middle of the scrap blocks and on edge ,so it stood 4 inches high. The shingles are just rectangles of cardboard (from packing boxes or shipping boxes), attached to the 2x4s with a electric stapler using heavy duty staples. They are overlapped just like you would see house roof shingles. This would create the angled roof that you see in the picture.
The upper and lower parts are screwed together with longer 2x4 blocks inside tube.
Around the inside of the tubes that are attached to the sheet of plywood, attached several, about one foot long, pieces of 2x4, leaving half of length of the 2x4s sticking up out of the top of the tubes. Then the top half of the gate could be placed over these 2x4s, matching the tubes to each other and sliding the top half down to match the bottom tubes, creating the complete gate.
Cardboard soaks up a lot of paint, so will required several coats.

As for the red color, Used a red wagon color paint , along with a flat black or Finding a red that would work with the red brocade that is used for a ladies' kimonos, or flowers so they wouldn't clash. Some have suggested that Vermilion or China Red is probably the more authentic color.

Music, literature, and poetry or wedding readings from the Bible
Attendants or witnesses to sign the wedding certificate or
Marriage License, Wedding Vows, Exchange of wedding rings or gifts
A blessing, benediction, community commitment to support the marriage, or officiates sanction of the marriage , A first kiss as a married couple

Two Aisle Wedding
A wedding processional using two aisles. People tackle the problem of two aisles in a variety of ways. You can choose to only use one aisle, but this means that many of your guests will feel far from the action. I often advise couples to do the processional up one aisle, and the recessional down the other. Another alternative is to have bridesmaids walk up one aisle, and groomsmen up the other. The bride and groom can then each choose an aisle to enter through. A wedding processional with a small bridal party If you only have a few people in your bridal party, it's a good idea to send them up one by one.

For example, if you had a best man, maid of honor, flower girl, and ring bearer this should be the orderGroom takes his place at the front Best man enters, Maid of Honor walks up aisle, Ring Bearer Flower Girl, Bride, with escort if she has one. With such a small wedding party, it's probably not formal enough to warrant a formal seating of the mothers and grandmothers. However, if you still want to do this, let the best man seat the grandmothers and the groom seat the mothers as part of their entrances.

For a non-denominational ceremony, a secular ceremony, or a non-traditional ceremony, you can either borrow liberally from one of these traditions, or make up your own rules. In all cases, the bride traditionally stands on the left, and the groom on the right. This dates back to medieval times when the groom might need to defend his bride in the middle of the ceremony, and wanted to leave his right hand, his sword hand, free. While few grooms even carry a sword anymore, the tradition has lasted.

They are usually escorted to their seats by a brother of the bride or groom, or by another usher. After they are seated, the officiates, groom and best man enter by a side door and wait at the altar. Groomsmen may also enter by a side door, or can escort the bridesmaids. Garland Ceremony or Lei Ceremony: The bride and groom exchange garlands of flowers. This is a common part of Indian weddings, where the ceremony is called varmala or jaimala, and represents a proposal by the bride and acceptance by the groom. It also represents their new unity, blessed by nature. In Hawaiian weddings, the bride and groom typically exchange leis. The families may also exchange leis with the couple. Leis represent the love and respect you have for the person you are giving it to, and the unity of the new family.

Circling: In Eastern European ceremonies, the bride and groom circle the altar three times, which are their first steps together as husband and wife. In Hindu ceremonies, couples circle the fire seven times, sealing their bond. The unbroken circle represents the unbroken commitment to each other.

Broom Jumping: An African-American tradition that has its roots in slavery times when slaves couldn't marry. Typically the family places the broom on the ground, and the bride and groom jump over it together. The broom can then decorate a place of honor in their home.

Lasso Ceremony: Lasso or rope is placed around the bride and groom's shoulders, usually by the officiate. Sometimes rosary beads, or orange flowers are used instead of rope. It can also be placed around the couple's necks, or wrists.

Torii Gate: The gate to a Shinto shrine (Jinja), the Torii designates holy ground. As Shinto is a religion of worship of nature spirits, or Kami, most Shinto shrines are located outdoors. The Gate marks the gateway between the physical and spiritual worlds, and is often the only indication that one is entering a shrine.
The Torii is traditionally made in three pieces, three being a sacred number of the Kami. When entering a shrine, a visitor will clap their hands three times, and bow three times to summon the spirits.

Cooking Recipe: Put Wontons in your soup, fry wontons for
an appetizer,wonton DIPPING SAUCE,and wonton wrappers.

Ingr:
1/2 (10 oz.) pkg. frozen chopped spinach or mustard green

1/2 lb. ground pork or veal

1 tbsp. sherry

1 tbsp. soy sauce

1 tsp. salt

1/2 tsp. garlic powder

1/2 tsp. minced fresh ginger

1 egg

1/2 tbsp. cornstarch dissolved in -1 tbsp. water

Dash of white pepper

60 wonton wrappers (each 3 x 3 inches)
Partially thaw frozen spinach or mustard green and lightly squeeze out liquid

(leave some liquid in).

Mix thoroughly with rest of the filling ingredients.
Have 1/2 cup cold water ready.

Cover the stack of wonton wrappers with a damp cloth or paper towel

while wrapping to prevent them from drying out.

Place 1 teaspoon filling just below the center from drying out.

Place 1 teaspoon filling just below the center at a corner of a wrapper.

Fold the corner over the filling and roll toward the center,

leaving 1 inch of the opposite corner unrolled.

Dip a finger in the water and moisten one end of the rolled wrapper.

Take the two rolled ends in the fingers of both hands and

pull them toward each other until the ends meet and overlap.

Pinch the ends firmly together to seal.

As each wonton is finished,

place it on a tray and cover with dry towel until ready to cook.

At this stage the wonton can also be frozen on a tray,

then transferred to a plastic bag or container.

* They will keep in the freezer for several weeks.

When ready to serve,

cook in boiling water for 2 minutes longer without defrosting.
In a large pot bring 2 quarts water to a boil and

drop in the desired number of wontons. Bring to a boil again.

Add 1/2 cup cold water to stop boiling.

Then bring to a boil once more.

Repeat adding cold water at least one more time.

When the wontons are done,

they will float to the top.

Drain in a colander.

*To serve as wonton soup:

1 c. water

5 tsp. minced scallion

5 tsp. soy sauce

2 1/2 tsp. sesame oil,

plain or hot Pepper to taste
Bring the chicken broth and water to a boil.

Divide the scallion, soy sauce, and

sesame oil at the bottom of 5 individual soup bowls.

Pour the hot broth over these.

As a soup coarse, add 25 drained, cooked wontons for 5 servings.

As a light meal, add 60 drained cooked wontons for 5 servings.

*To serve pan fried wontons as an appetizer:
After the wontons have been cooked in boiling water,

drain and cool completely.

Panfry them in a little oil to produce a brown crust on both sides.

Serve with soy sauce, sesame oil, and wine vinegar as a dip.

DIPPING SAUCE:
4 tbsp. soy sauce

2 tsp. sesame oil, plain or hot

2 tsp. wine vinegar

2 tsp. sugar

Great Grandma from Malta Meat Pie
1 lb macaroni -1 lb mixed ground beef and pork
1/2 lb chicken livers (optional)
1 lb flaky pastry or phyllo dough
2 large onions chopped - 3 garlic cloves crushed
2 tbsp tomato paste
4 tbsp grated parmesan cheese
4 eggs lightly beaten
1/2 lb ricotta -salt, pepper
Prepare sauce: saute onion and garlic in margarine. Add ground meat.
Salt and pepper to taste. Stir well and cook for about 15 minutes. Add
the tomato paste and a cup of beef stock. Simmer for an hour.
-- Fry livers in margarine for 5 minutes.
-- Boil macaroni until barely tender. Rinse under cold water. mix the
cooked meat and tomato mixture into the macaroni. Add ricotta, beaten
eggs, and grated cheese. Season with salt and pepper to taste. Stir well.
-- Cover bottom and sides of a baking dish with pastry or phyllo dough.
Put in a layer of macaroni mixture. If you cooked chicken livers,
arrange these over the macaroni and cover with another layer of macaroni.
Cover with pastry.
-- Bake in 375 oven for an hour or until the top is brown.
Let stand for half an hour before cutting in squares.

Best Cooking Recipe for Rocotta Pie!
This is the pie or some call it cake we have at easter.
Grandma's cooking recipe:
Roman Ricotta Cake or Crostata di Ricotta
For the dough:
2 1/2 cups (300 gr) flour
3/4 cup (150 gr) sugar
6 oz (150 gr) butter, diced (at room temperature)
1 whole egg and one yolk
1 teaspoon vanilla
pinch of salt
for the egg wash: 1 egg white,1 teaspoon milk

Bake for about 35-40 minutes.

Let the cake cool at room temperature, and un-mould. Serve lukewarm.
For the filling:

2 eggs, separated
3/4 lb (300 gr) ricotta cheese,drained of the water in a colander
1/2 cup (100 gr) sugar
2 - 3 tablespoons Rum liquorone
cup (150 gr) candied fruit,
diced 1/2 cup (50 gr) raisins,soaked in warm water and drained
2 oz (60 gr) pine nuts
grated rind of one lemon or orange
1 teaspoon ground cinnamon

Preparing the dough:
Pour the flour on a work surface, in a mound shape with a hole in the center.
Add in the well the sugar, diced butter, one egg, one egg yolk, vanilla, and pinch of salt.
Mix the ingredients, combine the flour . . . . and knead to form a smooth dough.
Shape like a smooth ball, cover with a plastic wrap and place in the refrigerator for about one hour.
Preparing the filling:
Separate the yolks from the whites and reserve the whites.
In a bowl put the ricotta cheese, sugar, egg yolks, and mix together to obtain a smooth cream.
stir-in the “amoretti” crumbs, rum, candied fruit, and raisins. Beat the reserved egg whites in a bowl until stiff.
Combine egg whites to the mix, stirring gently with a top to bottom motion.
Assembling the cake
Preheat oven 375 F (190 C). Butter a 10“ pan with removable bottom, and sprinkle with a small amount of flour. Remove the dough from the refrigerator. Cut one third of the dough and reserve.
Reduce the dough to ¼” (0.5 cm) thick disk with the help of a rolling pin.
Place the dough over the pan ...... and cover bottom and sides of the pan with the dough, trimming the dough evenly around the edges.
Prick the surface of the pastry evenly with a fork. This step is necessary to prevent the dough from puffing while baking.
Fill with the ricotta cheese mixture, and level with a spatula
Reduce the rest of the dough to ¼” (0.5 cm) thick and cut strips ¾” (2 cm) wide. Place the strips on the cake, crossing them in a diamond shape.
One last strip is to be placed as closure all around the border of the pan.
Prepare the egg wash lightly beating the egg white and the milk together in a small bowl. Brush the egg

Cooking recipe: Spinach and Ricotta Pie

Ingredients: For the Pastry
flour
margarine
pinch of salt
water

For the Filling
500g ricotta
80g grated cheese
150g ham
800g spinach
2 eggs
egg white
salt and pepper

Method

1 Clean and wash the spinach. Boil in salted water. When cooked remove as much water as possible.

2 Cut ham into small pieces. Mix ricotta, egg, ham, chopped spinach, salt, pepper and cheese. Mix well.

3 Grease a pie dish and line with pastry. Fill in with the mixture. Egg wash the edge and cover with pastry. Make some pastry decoration on top.

4 Egg wash and bake in a moderate oven for about 45 minutes.

Salt and pepper to taste
Oil for deep frying

RICE BALLS:

3 eggs, separated

1/2 stick butter

Pinch of salt

Pinch of cheese

Bread crumbs
Cook enough rice to equal 1 pound cooked rice (approximately 2 ounces dry)

for about 15 minutes. Drain and let cool. While cooling, make sauce.

Brown onion,

then chop meat in frying pan.

Add tomato paste, salt, and pepper to taste and cook 15 minutes.

When rice is cooled,

add egg yolks, grated Italian cheese, and salt plus

3 tablespoons sauce just to give the rice some color.

Mix well together with the butter.
Beat egg whites in a bowl.

Take a handful of rice mix; shape into a ball and make an indentation in the center.

Place tablespoon of meat sauce filling in center; reshape into ball.

Dip in egg whites and then bread crumbs.

Deep fry in hot oil until toasty brown. Serve hot.

PASTIZZI from Malta
(Ricotta cheesecakes) YUM! YUM!
Great Grandma,from Malta use to make this for me.

Pastry:
14 oz flour
Water
A pinch of salt
2 oz soft shortening
2 oz margarine

Filling:
14 oz ricotta
4 eggs
A pinch of salt
Pepper

Put the flour in a mixing bowl, add enough water to make a stiff dough.
Beat (in electric mixer) on medium speed until smooth. If the pastry is
at all sticky add more flour.
Roll the pastry out 1/8" thick on a floured board, spread the shortening
over the whole surface, using the hands. Roll up as for Swiss roll.
Now roll the pastry out again - spread it this time with margarine. When
ready for use roll it out for the third time.
Make the filling. Mash the ricotta with a fork, add the salt and the
unbeaten eggs.
The pastizzi may now be made into little tartlets in round tartlet cases
or they may be cut in the same way as ravioli.
Bake in a hot oven (400 degrees) for 20-25 minutes or until risen and
golden brown.
N.B. The most popular pastizzi are made with ricotta, but there are also two other varieties; one made with peas and onions and the other with anchovy.

Irish Soda Bread Recipe

Irish Soda Bread Recipe
It is best eaten freshly baked and warm or toasted.
4 cups flour,
2 Tbsp sugar
1 teaspoon salt,
1 teaspoon baking soda,
4 Tbsp butter,
1 cup raisins,
1 egg, lightly beaten
2 cups buttermilk

#1 -Preheat oven to 425°.
Sift together the flour, sugar, salt, and baking soda into a large mixing bowl.
#2 -Using a pastry cutter or two knives, work butter into flour mixture until it resembles coarse meal, then stir in raisins.
#3- Make a well in the center of the flour mixture. Add beaten egg and buttermilk to well and mix in with a wooden spoon until dough is too stiff to stir.
Dust hands with a little flour, then gently knead dough in the bowl just long enough to form a rough ball. If the dough is too sticky to work with, sprinkle in a little more flour.
Do not over knead!
Transfer dough to a lightly floured surface and shape into a round loaf.
#4- Transfer dough to a large, lightly greased cast-iron skillet or a baking sheet. Using a serrated knife, score top of dough about 1/2'' deep in an "X" shape. Transfer to oven and bake until bread is golden and bottom sounds hollow when tapped with a knife, about 35-45 minutes. Check for doneness also by inserting a long, thin skewer into the center. If it comes out clean, it's done.

Hint 1: If the top is getting too dark while baking, tent the bread with some aluminum foil.
Hint 2: If you use a cast iron skillet to cook the bread in the oven, be very careful when you take the pan out. It's easy to forget that the handle is extremely hot. Cool the handle with an ice cube, or put a pot holder over it.
Transfer bread to a rack to let cool briefly. Serve bread warm, at room temperature, or sliced and toasted.

Ricotta Pie Great Grandmas Old Italian Recipe

INGREDIENTS
3 pounds ricotta cheese
12 eggs
2 cups white sugar
2 teaspoons vanilla extract
1/4 cup miniature semisweet chocolate chips
* The Following is for the Crust :
4 cups all-purpose flour
5 teaspoons baking powder
1 cup white sugar
1/2 cup shortening
4 eggs, lightly beaten
1 teaspoon vanilla extract

DIRECTIONS
Beat the 12 eggs, 2 cups sugar and vanilla or lemon extract together.
Stir in the ricotta cheese and the chocolate chips. Set aside.
Preheat oven to 325 degrees F ,165 degrees C.
Grease two deep dish pie plates.
Combine the flour, baking powder, and 1 cup of the sugar together.
Cut in the shortening and mix until the mixture resembles coarse crumbs.
Mix in 4 of the eggs and 1 teaspoon of the vanilla.
Divide dough into 4 balls and chill, if needed.
Roll out 2 of the balls to fit into the pie pans.
Do not make the crust too thick as it will expand during cooking and get too thick.
Do not flute the edges of the dough.
Roll out the other 2 balls of dough and cut each into 8 narrow strips for the top of the crust.
Or Alternately you can use cookie cutters and place the cutouts on the top of the pies.
Pour the filling evenly into the pie crusts.
Top each pie with 8 narrow strips of dough or cookie cut-outs.
Brush top of pie with milk for shine.
Place foil on the edge of crust.
Bake at 325 degrees F 165 degrees C, for 20 to 30 minutes then remove foil.
Continue to bake for another 25 or 30 minutes or until a knife inserted in the center comes out clean.

Recipe Red Sauce with Calamari

What a treat! Red Sauce with Calamari It is a lot of work to prepare this meal, however it is worth the time,because your family and friends will enjoy the taste.

INGREDIENTS 2 pounds calamari, or 2 Packages Frozen whole Squid ,cleaned
4 cups tomato sauce, 2 Cans Tomato Puree
2- small 2 ounce cans, tomato paste in oil
1/4 cup Chianti Wine
1 tablespoon olive oil
2 teaspoons chopped garlic
1 teaspoon ground black pepper
Red Pepper flake or Cayenne Pepper ,to desired taste
1 teaspoon dried basil
Linguini or thin Fettuccine
Grated Romano Cheese

DIRECTIONS
Defrost, Clean Squid in cold water and ice pull spine out of long tube ,remove eyes & ink sack, suggestion this is not easy. Cleaning 2 lbs of squid takes a minimum of 45 minutes and that is if you know what you are doing. DO NOT USE FRESH SQUID . It is too tender and turns mushy when cooked, not rubbery like frozen does.
Here is how you clean squid, First you pull all the heads off, then you cut the tentacles off ,cut above the eyes. Discard the eyes save the point and lower portion of the head. Turn the tentacles inside out and cut off the round bulb center. Rinse and Drain. For the body of the squid, pull out all the back bones. Remove the black skin surface. Cut squid tube into 1 inch round ring pieces. Run under cold running water, drain.
In a saucepot, sauté chopped garlic in ¼ cup vegetable oil on low for 2-3 minutes do not brown, combine tomato sauce, red wine, olive oil, black pepper, cayenne pepper or red pepper flake, basil, . Simmer on medium low for about 30 minutes to give the alcohol in the wine time to evaporate, and all the flavors time to blend.
Add the calamari and whole tentacles to the sauce. Continue to slowly simmer for about another 20 - 30 minutes, stirring occasionally. Calamari is done when it is plump and more opaque brown almost. Do not cook on higher heat or for a longer period, as calamari is famous for becoming rubbery.

INGREDIENTS
3 cups vegetable oil
1/4 cup all-purpose flour
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon ground black pepper
12 squid, cleaned and sliced into rings
1 lemon - cut into wedges, for garnish
Ranch Dressing
DIRECTIONS
Preheat oil in a heavy, deep frying pan or pot.
Oil should be heated to 365 degrees F 180 degrees C.
In a medium size mixing bowl mix together flour, salt, oregano and black pepper.
Dredge squid through flour and spice mixture.
Place squid in oil for 2 to 3 minutes or until light brown.
*Beware of overcooking, squid will be tough if overcooked. Dry squid on paper towels.
Serve with wedges of lemon, Ranch dressing

Meal or Side dish Stuffed Cabbage Rolls
INGREDIENTS
2 cups uncooked long-grain rice
4 cups water
2 large heads savoy cabbage
1 cup water
2 onions, chopped
3 tablespoons butter
3/4 cup uncooked long-grain rice
1 pound extra-lean ground beef
1/2 pound pork sausage
4 cloves garlic, minced
2 teaspoons dried dill weed
3/4 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon white sugar
1 can 26 ounce condensed tomato soup
1 can 28 ounce whole peeled tomatoes, with liquid
8 bay leave

DIRECTIONS
Wash rice thoroughly. In a medium saucepan, combine 2 cups rice and 4 cups water. Bring to boil; reduce heat, cover and simmer for 20 minutes or until all of the water is absorbed.
In the meantime, remove the core from the cabbages using a thin, long knife. Place 1 cabbage in a microwave proof container with a lid with core side down. Pour 1/2 cup water into the container with the cabbage, cover and microwave on HIGH ,or full power, for 10 minutes. Carefully turn cabbage over and cook covered for an additional 10 minutes. When cabbage is cooked, let sit until it is cool enough to handle. Separate leaves carefully, removing any tough ribs. Cook the second cabbage in the same manner.
Divide chopped onions in half. Saute one half of the onions in 3 tablespoons butter; cook just until translucent, do not brown.

In a large mixing bowl, mix together both the cooked and uncooked rice, cooked and uncooked onions, ground beef, pork sausage, garlic, dill weed, salt, black pepper and sugar and mix well to blend.
Spoon about 2 tablespoons of mixture onto each cabbage leaf. Bring one end of cabbage leaf over mixture, roll and tuck ends in to prevent any filling from falling out.
Preheat oven to 350 degrees F 175 degrees C. Prepare two 9x13 inch casserole dishes by placing some left over cabbage leaves in bottom of each. Arrange cabbage rolls in a single layer tight against each other.
In a food processor or blender, process condensed tomato soup and tomatoes. Pour tomato mixture over the cabbage rolls until just covered. Place 4 bay leaves on top of sauce in each dish. Cover each dish tightly with aluminum foil.
Bake in a preheated 350 degrees F 175 degrees C oven for 2 hours. Once cooked, remove the dishes from the oven and let cool for 15 minutes before removing aluminum foil. Serve hot.

2 tablespoons olive oil
2 large sweet onions, roughly chopped
1/2 cup tamarind paste
2 tablespoons minced garlic
2 tablespoons minced ginger
2 jalapenos, seeds removed and minced
1/4 cup chopped canned anchovies
1/4 cup tomato paste
2 whole cloves
2 tablespoons freshly cracked black pepper
1/2 cup dark corn syrup
1 cup molasses
3 cups white vinegar
1 cup dark beer
1/2 cup orange juice
2 cups water
1 lemon, thinly sliced
1 lime, thinly sliced

PREPARATION

Heat the olive oil in a large saucepan and saute the chopped sweet onion until soft, about 7 minutes.
Add the tamarind paste, garlic, ginger, and jalapenos. Cook over medium-low heat for another 5 minutes. Add anchovies, tomato paste, cloves, pepper, corn syrup, molasses, white vinegar, dark beer, orange juice, water, lemon, and lime. Stir to combine and bring to a boil. Reduce heat and simmer, stirring occasionally, for about 3 hours until thickened enough to the back of a spoon. Strain Worcestershire sauce into a glass bottle and refrigerate. Yield: about 6 cups

Thai Seafood Noodle Salad

Pasta Salad
INGREDIENTS
2 cups or 200 g. glass or cellophane noodles also known as bean thread because they are made with bean flour
15 oz. 400 g. mixed fresh ,or frozen seafood, such as shrimp, squid, clams, cuttlefish, mussels, etc..
1 stalk lemongrass, thinly sliced ,for more on preparing lemongrass, see below
approx. 1 loose cup of fresh coriander
approx. 1 loose cup of fresh basil ,both Thai holy basil and sweet Italian basil will work
3 spring onions ,scallions, sliced
1 fresh tomato, cut into small wedges
1 small or 1/2 medium cucumber, cut into matchstick-like pieces
SALAD DRESSING
juice of 1 lime 3-4 Tbsp, or substitute lemon juice
4 Tbsp. fish sauce
2 Tbsp. regular soy sauce or wheat-free soy sauce for gluten-free diets
1-3 tsp. chili sauce 1=mild, 2=medium, 3+=hot OR substitute 1-3+ fresh red or green chilies. minced
5 cloves garlic, minced
1/3 cup fresh, chopped coriander, including stems
Optional: 1 tsp. sugar if you prefer salty and sour flavors over sweet, omit the sugar
TO SERVE optional
a bed of lettuce or Chinese cabbage on which to place the salad
PREPARATION
1. Soak the noodles in cool water for 1 hour, or until very soft OR, if you're in a hurry, gently boil the noodles until they are soft and transparent ,about 10 minutes.
2. While noodles are soaking, or boiling, place all salad dressing ingredients together in a cup. Stir well to combine. Set aside.
3. Rinse noodles with cold water. Drain completely and slide them into a large mixing bowl.
4. Bring 3-4 cups water to boil in a soup-type pot. Add the lemongrass slices and boil until fragrant 1-2 minutes.
5. Add the seafood and boil for 1-2 minutes, or just until seafood is cooked. Try not to overcook, as this will make it rubbery.
6. Drain seafood, including lemongrass. Rinse with cold water. Add the drained seafood and lemongrass to the mixing bowl, along with the noodles.
7. Add to the mixing bowl, fresh coriander and basil, spring onions, tomato, and cucumber.
8. Now pour the salad dressing overtop, tossing well to combine.
Do a taste test. Add more fish sauce if not salty enough. If not spicy enough, add more chilli sauce or fresh chilli. If too sour for your taste, add a little more sugar. If you have time, allow the salad to sit in the refrigerator 1 hour or more. Then just toss again and serve.
To serve, place salad on a bed of green or red lettuce, Or Chinese cabbage.

Ingredients
1 lb. Rigatoni Macaroni
Penne, Ziti, tri-color spiral pasta, farfalle
bow-tie pasta any pasta or ravioli is good
1Bunch Broccoli
1 Sm. Bag Carrots
2 Celery Stalks
1 Red Bell Pepper
1 Red Onion
1 Clove Garlic
2 Chicken Breasts
1 Small Jar Marinated Artichoke Hearts
1 Small Can Sliced Black Olives
Vegetable Oil
Red Wine Vinegar
Italian Parmesan Cheese

Directions:
2 seasoned Chicken* breasts marinated in Worcestershire sauce,
vegetable oil, red onion, garlic, cover refrigerate 2-3 minutes
1 bunch Broccoli cut flowerets, peel & cut stems into cubes,
steam in ¼ cup water 3- minute or blanched slightly till outer is tender,
uncover, remove broccoli from water.
Add 2 table spoons of oil, & ½ tea spoon of minced garlic.
Lightly cover, mix and let stand at room temperature .
4 long med-size weigh Carrots (or 1 small bag of baby carrots)
wash, peel if needed , cut into ½ inch coin slices,
cook till a little tender but hard in center
Clean 2 long Celery stalks with leaves from mid section,
cut long stalk by hand in haft, slide & pull strings off ,
cut stalks in ½ inch angle slices ,chop and dice leaves
Remove Chicken from refrig. Broil or Grill until cooked,
cut ¾ inch quartered lengthwise, shake a little
steak seasoning or salt pepper lightly.
1 small can of sliced black Olives, drained, and dried
1 large red or yellow bell Pepper, use uncooked, peels lightly,
dis-guard pits & cut whites inners,
then cut pepper into matchstick-size strips
if using a green pepper roast lightly, peel,
then cut pepper into matchstick-size strips
Red Onion cut diagonally 3 thin slices
separate and pop all the rings, any inner fat ones dice or cut into cubes.
Marinated Artichoke hearts use 1 small jar in oil
In a small measuring cup whisk in ¼ cup Red Wine Vinegar,
1/2 cup olive Oil,
1/2 teaspoons minced Garlic or garlic powder
Note instead of chicken you may use
12 frozen Shrimp follow directions for cooking ,
you can add ground ginger, for taste and chopped green scallions,
and flat young snow peas instead of celery
or 4 Spicy Italian Sausage, sliced in angle
PASTA , Any Pasta is good
1 lb. Rotini Macaroni Use a large enough pot
For each pound of pasta, you will need at least 4 quarts of water.
Add 2 table spoons of coarse salt, after the water comes to a boil,
add 2 tablespoons oil into water and stirring frequently.
Add pasta to salted boiling water, cook uncovered.
Cook 2 to 3 minutes less than manufacturer's instructions,
until the outside of pasta is cooked and the inside is underdone.
When Is It Done Pasta should be al dente firm to the bite
If undercooked, it will have a chalky core and floury taste;
if overcooked, it will be limp and soggy. When cooking pasta to use later,
it is especially important that it is al dente as it will continue to cook .
Start tasting the pasta two to 10 minutes before the end of the cooking
time given on the package.
Transfer pasta to a colander, and rinse under cold running water
to stop the cooking; drain well
Find a Large Platter or Microwave dish transfer drained cold pasta
Take measuring cup of whisk red wine vinegar and oil and garlic,
and pour over pasta
Toss broccoli with cut red peppers, artichoke hearts with oil,
olives drained and dried, along with drained carrots, red onion,
celery and toss to combine
If you used other extras like; shrimp, chicken,
sausage mix a little into pasta and save some pieces to garnish over top,
add Italian Parmesan Cheese coarsely graded

1/3 cup sun dried tomatoes
1 cup hot water
1/2 cup olive oil
Green Pepper. Uncooked Peeled ,cut in tooth pick size
1/4 cup sherry wine vinegar
1/4 cup chopped fresh basil
1/4 red onions, sliced cut in tooth pick size
2 yellow or green small zucchini ( un cooked tooth pick size)
2 cloves garlic, minced
A pinch of oregano
( for garnish ) 1 avocado, sliced in wedges
1 box fettuccine pasta

PREPARATION:
Soak the sun-dried tomatoes in the hot water for 5 to 10 minutes, then drain the excess water.
In a large bowl, toss together the tomatoes with the remaining ingredients, except pasta, and avocado, then gently toss with hot pasta

INGREDIENTS:

16 oz. dried pasta, such as rotelle or elbows
1 medium zucchini, diced
1 red pepper, diced
1 small onion, diced
1 6 oz. jar marinated artichokes, drained
1/2 cup sliced black olives
1 16 oz. bottle garlic ranch dressing
1/2 cup grated Parmesan cheese
PREPARATION:
Bring a large pot of water for the pasta to boil. Cook 6-8 minutes, according to package directions. Drain.
Toss pasta with zucchini, red pepper, onion, artichokes and black olives.
Add about 3/4 of the bottle of salad dressing
Toss. If the salad is not well-coated, add the rest of the bottle.
Refrigerate, if planning to serve later. When ready to serve, tp with grated cheese.

Pasta with Mussels Fra Diavolo,in your wildest dreams could a meal be so classy and be made in such little time .Last week out of the blue my friends called they heard I was renting a townhouse in Malibu,California for the summer. With out any notice 4 of our friends called to tell us they were a couple of hour away and would be stopping in.....wouldn't you know it was dinner time. With so little notice and being 4 of July week end I new that it would be impossible to arrange finding a place for all of us to eat in a restaurant near by.All I could find in the house was a couple of loafs of fresh Italian bread and saw I had made a large pot of tomato sauce that would be enough for 6 people that I had made the night before. However I didn't want to serve just plain pasta and sauce.Earlier that day I had remembered noticing that the market was sold out of the butcher meats and remembered see mussels ,that is when this recipe came to my mind. PASTA WITH MUSSELS Fra Diavolo...what a fabulous great tasting meal to prepare in so very little time . Serves 6 or more in a hurry with little muss or fuss!
Ingredients
1 lb. pasta or 12 ounces fresh fettuccine
(I prefer spaghetti with this but any pasta will work well)4 tbsp. olive oil6 cloves garlic, chopped (or 2 tsp. jar chopped garlic)1 onion, thinly sliced1/2 tsp. red pepper flakes (add more or less depending on how hot you want it)2 cans crushed tomatoes
3 Plum Tomatoes1 cans tomato purée1 cup red wine1/4 cup basil 6 lbs. mussels, soaked and scrubbed, beards removed2 cups white wine1 cup grated pecorino Romano cheese (or Parmesan)
Directions
In a large saucepot, heat olive oil over medium-low heat.
Add garlic and onion. Sauté until just beginning to brown.
Be careful DO NOT BURN this will make sauce bidder
Add red pepper flakes and 3 Plum Tomatoes.
Sauté for 10 minutes more.
Add crushed tomatoes, tomato purée and wine.
Stir to combine. Bring to a 10 simmer.
Reduce heat to medium-low. Partially cover. Simmer for 30 minutes.
Place mussels into pot bring to a constant bubble. Cook at this temperature,
Stirring occasionally, until all mussels are open, about 15 minutes.
Then bring to a low Simmer for 30 minutes(crushed tomato, onion, tend to stay at bottom of sauce so make sure you stir occasionally)
Remove cover and cook 10 more minutes, over low heat.
Discard any mussels that do not open.
Season with salt and pepper to taste.
Meanwhile, cook pasta al dente; drain.
You can serve this dish with the mussels in the shell or without the shells.
If you don not want to use the shells, remove mussels from shells now
Place pasta on a large platter and pour sauce over top.
Top with opened mussels.
